Torre dei Mastro è una piccola realtà a conduzione familiare che da 4 generazioni si prende cura di qualche migliaio di ulivi secolari e millenari, in un meraviglioso fazzoletto di terra pugliese, situato tra Castellana Grotte e Monopoli.
Lo facciamo con amore, attenzione e profonda gratitudine verso il territorio che ci ospita: un luogo di inestimabile valore e incredibile bellezza.
Qui potrai trovare prodotti di qualità, coltivati senza veleni, nel rispetto della natura e dei suoi tempi: Olio Extravergine di oliva, Vino Primitivo Rosso e Verdeca Bianca, Ciliegie, Mandorle e Carrube. Sapori di una volta, che hanno origine in terreni vivi e floridi di biodiversità.
La ricerca di soluzioni sostenibili, a livello ambientale, economico e umano, hanno da decenni guidato la nostra azione, per questo abbiamo deciso di dedicare tempo ed energie nell’esplorare nuovi – e antichi – modi di lavorare senza petrolio.
In quest’ottica, nel 2012, abbiamo accolto in masseria Lana e Deianira, due puledre CAITPR (unica razza da tiro pesante rapido in Italia). Grazie a loro le nostre attività negli uliveti, nei vigneti, nell’orto e nei frutteti, hanno un impatto sull’ambiente estremamente positivo.
Alla trazione animale si è ben presto aggiunta l’elettrificazione dei nostri strumenti da lavoro, così da ridurre ulteriormente l’utilizzo di combustibili fossili, ad oggi davvero irrisorio.
Crediamo nello scambio, nella filiera corta, nel baratto e nel consumo critico (pensato, sentito). Riteniamo preziosi gli antichi saperi e fondamentale il tramandarli, per questo organizziamo spesso corsi e giornate d'incontro. Ci prendiamo cura della terra e di ogni essere vivente che passa di qui: che siano i numerosi gatti ormai di casa, il cane Nino e gli altri suoi amici, le galline e i galli felici, a cui abbiamo costruito due pollai mobili per farli stare sempre all'aperto, le oche chiaccherone, i conigli, le api, i numerosi lombrichi che abitano i terreni, fino all'ultima formichina che ci buca le zucchine... anche lei viene accettata e rispettata. Forse proprio per questo la masseria è divenuta luogo di transito e d’incontro di tantissime specie animali, umane e non!
Gestione e potatura dell'oliveto, come si faceva una volta! Ovvero tramandando quelle tecniche che hanno permesso ai nostri avi di lasciarci in eredità un patrimonio unico al mondo.
Gestione e potatura della vigna: vinificazione naturale, senza l'utilizzo di sostanze di chimica di sintesi, né di lieviti o solfiti aggiunti. Il vino dei nostri nonni, quello che fa solo bene al cuore, per intenderci.
Gestione dell'orto e gestione e potatura del frutteto: applicando le tecniche dell'agricoltura organico rigenerativa, naturale, a trazione animale.
Raccolta e lavorazione dei frutti (a secondo dei periodi).
Autocostruzione in bioedilizia in particolar modo utilizzando il cocciopesto e il legno.
Qui le giornate cambiano molto, a secondo del meteo e dei mesi. Come ogni realtà contadina andiamo letteralmente al ritmo delle stagioni e del tempo. Nelle giornate di sole il lavoro nei campi è tanto (potatura, orto, raccolta frutti, foraggio, frantoio), in quelle più piovese ringraziamo e lavoriamo all'interno, facendo per lo più lavori di ristrutturazione e riordino della masseria in cui viviamo, ci occupiamo delle spedizioni, imbottigliamo il vino...
Alcuni week-end li dedichiamo alla condivisione di buon pratiche, organizziamo corsi e incontri con altre persone interessate a portare aventi un certo tipo di agricoltura e di difesa del territorio.
La nostra posizione, tra Castellana grotte e Monopoli, è davvero strategica! Abbiamo un meraviglioso mare a due passi e le nostre campagne accolgono straordinari ulivi secolari. Qui la terra è ancora prospera e accogliente. I siti di interesse turistico sono numerosi: dalle Grotte, ai trulli, dalla piana degli ulivi monumentali ai centri dei borghi della zona (Polignano, Alberobello, Locorotondo...).
La cucina è spettacolare in tutta la Puglia, ma qui in masseria c'è una cuoca d'eccezione: Laura! Mia mamma, che ancora oggi frigge e sforna come se non ci fosse un domani.

I wwoofer che ospitiamo hanno a disposizione una yurta e una roulotte, una compost toilette, una doccia e una cucina esterna (a gas). La roulotte e la yurta sono riscaldate (da tufa elettrica la roulotte e da stufa a legna la yurta), però non hanno bagno interno (la compost toilette è esterna). L'acqua calda c'è solo nei mesi estivi (scaldiamo l'acqua con il sole).
Non siamo pratici con l'inglese perciò daremo la preferenza a wwoofer che masticano almeno un po' l'italiano.

Torre dei Mastro is a small family-run business that has been taking care of a few thousand centuries-old olive trees for four generations, in a wonderful handkerchief of Apulian land, located between Castellana Grotte and Monopoli.
We do this with love, care and deep gratitude towards the land that hosts us: a place of inestimable value and incredible beauty.
Here you can find quality products, grown without poisons, respecting nature and its times: Extra virgin olive oil, Primitivo Rosso and Verdeca Bianca wine, cherries, almonds and locust beans. Flavours of yesteryear, which originate in living soils flourishing with biodiversity.
The search for sustainable solutions, on an environmental, economic and human level, has guided our actions for decades, which is why we have decided to dedicate time and energy to exploring new - and ancient - ways of working without oil.
With this in mind, in 2012, we welcomed Lana and Deianira, two CAITPR fillies (the only heavy rapid draft breed in Italy), to the farm. Thanks to them, our activities in the olive groves, vineyards, vegetable garden and orchards have an extremely positive impact on the environment.
In addition to animal traction, we soon added the electrification of our working tools, so as to further reduce the use of fossil fuels, which to date has been negligible.
We believe in exchange, short supply chains, barter and critical (thought, felt) consumption. We consider ancient knowledge precious and passing it on fundamental, which is why we often organise courses and meeting days. We take care of the land and of every living thing that passes through here: whether it be the many cats that are now at home, the dog Nino and his other friends, the happy hens and roosters, for whom we have built two mobile hen houses so that they can always be outside, the chattering geese, the rabbits, the bees, the numerous earthworms that inhabit the land, or the last little ant that pokes holes in our courgettes... even it is accepted and respected. Perhaps this is precisely why the masseria has become a place of transit and meeting place for so many animal species, human and otherwise!
Managing and pruning the olive grove, the way it used to be done! That is, handing down those techniques that allowed our ancestors to bequeath us a heritage that is unique in the world.
Vineyard management and pruning: natural winemaking, without the use of synthetic chemicals, yeasts or added sulphites. The wine of our grandparents, the one that is only good for the heart, in other words.
Orchard management and pruning: applying organic regenerative, natural, animal-drawn farming techniques.
Fruit picking and processing (depending on the season).
Self-building in green building especially using earthenware and wood.
Here the days change a lot, depending on the weather and the months. Like any farming reality, we literally go with the rhythm of the seasons and the weather. On sunny days there is a lot of work in the fields (pruning, vegetable garden, harvesting fruit, fodder, oil mill), on rainy days we give thanks and work inside, mostly doing renovation and tidying up the farmhouse where we live, taking care of shipping, bottling wine...
Some weekends we dedicate to sharing good practices, we organise courses and meetings with other people interested in bringing forward a certain type of agriculture and defence of the land.
Our place, between Castellana grotte and Monopoli, is really strategic! We have a wonderful sea just a stone's throw away and our countryside is home to extraordinary centuries-old olive trees. Here the land is still prosperous and welcoming. The sites of tourist interest are numerous: from the caves to the trulli, from the plain of monumental olive trees to the villages in the area (Polignano, Alberobello, Locorotondo...).
The cuisine is spectacular throughout Puglia, but here at the masseria there is an exceptional cook: Laura! My mother, who still fries and bakes like there is no tomorrow.

WWOOFers will have a yurt and a caravan, an external compost toilet, a shower and an outdoor (gas) kitchen at their disposal. The caravan and yurt are heated (by an electric stove in the caravan and a wood stove in the yurt), but they do not have an indoor bathroom. There is only hot water in the summer months (we heat the water with the sun)'.
